The DEXs can provide liquidity even for rarer token pairing by "routing" orders. For instance, if the A-C pair doesn't have orders, but token pair A-B, and B-C does, QUANTA can automatically route these orders for A-C via A-B, and B-C. Thus, the Quanta DEXs don't have a fixed list of token pairing.
